Here is the best way to grill a fish...

Marinate it for 1 hour in some balsamic vinegar, olive oil, salt, pepper and savory (for a little kick add red pepper flakes). Coat it real good and set in two pieces of foil, crimp and cook till fish pulls away from skin easily.

You can also cold smoke it.  There is now a product called SmokeCones, that you light like a candle and it smokes your food for up to about 25 minutes before you turn on the grill.  Then you turn on the grill and cook your food as usual.

So far, at Ace Hardware.... they're about $4.  Now in four flavors -- hickory, mesquite, cherry and apple.

packet cooking is a nice way t o go but I like the small planks or a flat pan with the 1/4" or so holes in it.
as long as the skin is on it works great and a lot more flavor.
slide the fish off with or without the skin.
if you leave the skin on teh pan turn up the heat after you pull the fish off and it is pretty easy clean up after dinner.
